Add all other ingredients to pot, cover and simmer until rice is tender about 30-40 minutes.
Notes
Depending on how much liquid is in your tomatoes, you may need to add a little more water/broth if the rice has absorbed the liquid and is still not tender.
Toss in some diced cooked chicken for a variation.
