No Sugar Added Concord Grape Juice

Ingredients
  • Concord grapes - whatever amount you have
  • Water to dilute the concentrate into juice
Instructions
  1. Remove grapes from the stems and place in a strainer. Compost any grapes that have insect holes or other oddities you don't wish to have in your juice.
  2. Rinse grapes for a minute or two to wash off any dirt.
  3. Place grapes in a large stockpot (do not add water).
  4. Turn burner on medium and mash with a potato masher every few minutes. The skins will burst and then the juice will gradually be released as the grapes are mashed.
  5. Continue simmering for about 15 minutes until grapes are totally mashed and mushy.
  6. Let cool and then strain through a food mill or sieve. It will still be a bit thick after this so I usually do a second strain through a finer mesh strainer or cheesecloth.
  7. Now you have concentrate! Either freeze at this point, make jam or wine or continue with making juice.
  8. To make grape juice, you'll most likely want to add a little water so it's less syrupy. My favorite ratio is 2 parts grape juice concentrate mixed with 1 part water. Add as much or as little water as you like according to your taste.
