Cilantro Lime Rice

Serves: 2 cups
- 1 cup long grain rice of any kind
- 1½ cups low sodium chicken or vegetable broth
- 3 tablespoons corn kernels
- 1 clove garlic, minced
- 2 tablespoons cilantro, chopped
- 1 tablespoon lime juice
- Salt to taste (omit to keep it low sodium)
- Cook rice in a saucepan using the broth instead of water.
- When rice has about 5 minutes left to cook, stir in the corn.
- Remove from heat when fully cooked and stir in garlic, cilantro and lime juice.
- Add salt to taste and serve!
