Pineapple Salsa

Serves: 4
- 2 cups fresh pineapple, finely diced
- 2 tomatoes, seeded and diced
- 1 small onion, diced
- 1 jalapeno, seeded and finely diced
- 1 clove garlic, minced
- ¼ cup cilantro, chopped
- 2 tablespoons lime juice
- ¼ teaspoon pink himalayan salt
- Place all ingredients in a bowl and stir to combine.
- Enjoy with chips, or on top of chicken, chops or sweet potatoes!
To can this: add 2 additional Tbs lime juice, heat to boiling and ladle into hot sterilized jars. Boiling water bath process 20 minutes for pints.
