6 slices prosciutto cut in half lengthwise to make 12
handful of arugula
small log of goat cheese (I used one that was rolled in cinnamon and cranberries but a honey goat cheese would also be awesome!)
1 loaf baguette sliced thin and toasted (if making the sandwich version)
Instructions
Make the balsamic glaze by simmering balsamic vinegar and coconut sugar in a small saucepan for 12-15 minutes. Let cool.
Smear a small amount of goat cheese on each slice of pear, top with one arugula leaf and wrap in one piece of prosciutto. Place on serving tray and drizzle with balsamic glaze.
For the mini sandwich version: smear the goat cheese on a piece of baguette, add 1-2 slices of pear, a piece of prosciutto, a few leaves of arugula, drizzle with balsamic glaze and top with another piece of baguette. Secure with a toothpick and serve.
