Sesame Citrus Bok Choy

- 2 bunches bok choy, roughly chopped
- 2 cloves garlic, minced
- 1 teaspoon sesame oil
- ½ teaspoon orange zest
- 1 tablespoon orange juice
- 1 teaspoon mirin (rice wine)
- 1 teaspoon rice vinegar
- ½ teaspoon pink himalayan salt (or to taste - use just a pinch for low sodium)
- 2 tablespoons cilantro
- 1 tablespoon sesame seeds, toasted
- Combine orange zest, juice, mirin, vinegar, salt, and cilantro in small bowl and set aside.
- In a large frying pan or wok, sauté garlic in sesame oil just until fragrant.
- Add bok choy and stir fry until wilted, about 2 minutes.
- Pour orange juice mixture over bok choy and stir fry until tender, 3-5 minutes.
- Place in serving dish and sprinkle with toasted sesame seeds.
for low sodium, use just a pinch of salt = 118 mg per serving
