This bowl of cheesy awesomeness…Chile con Queso was my go-to appetizer for no less than three gatherings this holiday season among family and friends. It is the ideal blend of creaminess and spice with a little sneaky veggie value thrown in for good measure.

Sautéing a combination of hot peppers with garlic brings out just a hint of smokiness in the peppers and enhances their sweet flavors.  Toss in some cream and two kinds of shredded cheeses with a spoonful of pumpkin or squash puree and you have a sure-fire win!  Both of my daughters LOVED this healthier version of chile con queso with roasted broccoli for a satisfying snack. With football season still in full swing, this makes for the perfect dipper for veggies and chips alike while you watch the game!

Serves: 3 cups
Ingredients
  • ¾ cup heavy cream
  • 1 cup queso quesadilla, shredded
  • 1 cup sharp cheddar, shredded
  • ¼ cup pumpkin or squash puree
  • 2 habanero chile peppers, seeded and finely chopped
  • 2 red fresno chile peppers, seeded and finely chopped
  • 1 clove garlic, minced
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon smoked salt (can use regular salt)
  • ¼ teaspoon chili powder
  • ½ cup finely diced tomatoes
Instructions
  1. In a medium saucepan, place chiles and garlic with a small amount of oil or butter and saute on medium heat until they are very fragrant and start to soften.
  2. Add cream, cheeses and pumpkin/squash puree and stir to combine.
  3. Once cheeses are smooth and melted, add remaining ingredients and stir until combined.
  4. Serve hot with any kind of dippers. Great on roasted veggies or corn chips!
Notes
You can also add ½ pound of browned ground beef for a heartier dip!

Mayday, mayday!  Stress overload during this first week of May and it’s not about to get better so apologies in advance for any one-and-lonely posts in the weeks to come.  In a whirlwind of house touring last week, we did find the perfect house to move into, thankfully, only three weeks from now (EEEEK!!!).  Enter the fact that our annual neighborhood garage sale is this coming weekend with much to prepare for and there’s just a wee bit going on in my humble household.  At least the garage sales are super fun. Each year our neighborhood has about 200 sales which includes a number of food vendors and other fun things lining the streets.  It’s like a carnival and party with all the neighbors, right on our street! I’m sure going to miss this celebration after we move.

Tomorrow just happens to be another fun celebration, Cinco de Mayo and I feel the need to post a pico de gallo (or garden fresh salsa) recipe just in time for the festivities.  You know how I love things to be easy and this recipe is no different.  I don’t waste time seeding any of the veggies. If the tomatoes happen to have hard cores, I do take that part off but otherwise, everything just gets quartered and tossed into a food processor. A quick little whir and it’s done! Of course, not seeding the tomatoes does mean that it’ll be a little watery so I simply strain the salsa before transferring into a serving bowl. Feel free to keep the liquid that is strained as it makes a tasty meat marinade.

Serves: 2 cups
Ingredients
  • 6-8 medium tomatoes
  • 2 jalapeños
  • ½ white or yellow onion
  • 2 garlic cloves, peeled
  • ¼ cup cilantro
  • 1 tablespoon lime juice
  • ½ teaspoon pink himalayan salt (or more to taste)
Instructions
  1. Stem and quarter all of the veggies. Remove hard cores from tomatoes.
  2. Place all ingredients in a food processor and process until no large chunks remain.
  3. Strain extra juices out and scoop into a serving bowl.
  4. Serve with tortilla chips and a smile.
Notes
reserve liquid from straining if desired for a tasty meat marinade!

This week is going to be a simple one easy recipe post kind of week. My husband, Jason, and I are celebrating our 10 year anniversary on Thursday so we’re skipping out of town to celebrate.  We were married in the Van Dusen mansion in downtown Minneapolis on a rather warm day for January so as a fun reminder of our mansion wedding, we are staying at a mansion turned bed and breakfast in a nearby town.  I am SUPER excited to leave the kids behind and get out for some wining, dining and relaxing together.  Grinning from ear to ear at the notion of getting out with my main man!

Football season is quickly coming to a close this weekend so I’ll leave you with one great appetizer for your Super Bowl party spread.  This spicy yogurt dip is packed with flavor and spice to go perfectly with any dippers you choose to serve it with.  Veggies, pretzels and even chicken skewers go wonderfully well with spicy yogurt dip. Using a homemade salsa or one that’s not super chunky will work best to give it the right dippable consistency. I’ve used this dip as a marinade for chicken breasts as well and they turned out deliciously moist and tender with exceptional flavor.  Best of all, spicy yogurt dip comes together in about 5 minutes for a super easy appetizer!

Spicy Yogurt Dip

Serves: 1½ cups
Ingredients
  • 1 cup plain unsweetened Greek yogurt
  • 1 clove garlic, minced
  • ¼ cup salsa (thinner less chunky salsa works better)
  • 1 tablespoons lime juice
  • 1 teaspoons chili powder
  • 1 teaspoons cumin
  • ¼ teaspoon paprika
  • ¼-1/2 tsp pink himalayan salt, to taste (use just a pinch for low sodium)
Instructions
  1. Mix all ingredients together in a medium sized bowl.
  2. Serve with veggies, pretzels, chicken skewers or other dippers of your choice!
Notes
reduce salt to just a pinch for low sodium for 124mg per serving or omit for 89mg serving
