Greek Feta Dip

We’re heading to a Superbowl gathering this Sunday and I had to look up which teams are playing…ha! That’s how I roll when it comes to sports. Unless my kid is in it, I’m blissfully unaware of the sports world in most cases.  I may not know which team to cheer for, but I DO know what foods I’ll be bringing to share. I’ll be bringing a rustic guacamole with tortilla chips, turkey teriyaki meatballs and this Greek feta dip with mixed veggie chip dippers!

Greek feta dip combines Mediterranean flavors of oregano and marjoram with feta, homemade mayo and plain Greek yogurt for a cravingly creamy concoction. The feta and yogurt combo give this dip a unique tang that’s incredibly tasty. Since making it yesterday, I’ve been addicted to dipping every cut vegetable and colorful veggie chips by the handful. Tonight, I’ll be putting this dip over baked potatoes for a tater topper with a tangy twist! In place of the Greek yogurt, you can also use sour cream for an equally delicious dip.

Serves: 2 cups
Ingredients
  • 1 cup crumbled feta cheese
  • ½ cup plain unsweetened Greek yogurt (or sour cream)
  • ½ cup mayonnaise
  • 1 clove garlic, minced
  • 1 teaspoon lemon juice
  • ¼ teaspoon marjoram
  • ¼ teaspoon oregano
  • ¼ teaspoon black pepper
  • 1 tablespoon diced cucumber
  • 1 tablespoon diced tomato or sundried tomato
  • 1 green onion, diced
Instructions
  1. Place all ingredients except the cucumber and tomato into a blender (or a tall container for an immersion blender) and blend until combined.
  2. Top with the cucumber, tomato and green onion (can also just stir these in if preferred).
  3. Serve with fresh cut vegetables, veggie chips, pita chips or use as a baked potato topping!
